CPU
The CPU of Snapdragon 780G is clocked up to 2.4 GHz while Snapdragon 768G is clocked up to 2.8 GHz, but still, SD 780G is a better option than Snapdragon 768G because the snapdragon 780G has the latest cortex A78 cores while Snapdragon 768G has cortex A76 cores. Due to this Snapdragon 780G has a better performance gain.
GPU
GPU of chipset snapdragon 780G is equipped with Adreno 642 while the snapdragon 768G is equipped with Adreno 620. Frankly, Adreno 642 is much better than Adreno 620 other than the clock speed of Adreno 620, so choose wisely.
Display
In-display section, Snapdragon 780G supports display up to 144Hz refresh rate in FHD resolution while display resolution in Snapdragon 768G supports only up to 120 Hz in FHD+ resolution only but it also has an option of QHD+ resolution with 60 Hz refresh rate. So consequences and advantages are present in bot the SoCs.
Energy efficiency and battery life
As the facts are seen by the specifications in which Snapdragon 780G built on 5 nm lithography while Snapdragon 768G built on 7nm process technology. This points out that Snapdragon 780G is better than Snapdragon 768G in Power efficiency as the small size semiconductor indicates the more no. of transistors embedded in SoC (System on Chip) which is not only energy efficient but also significantly enhances the overall performance of the chipset.
Qualcomm Snapdragon 780G

Summary
The best chipset in mid-tier range (700 series) of Qualcomm.
Qualcomm Snapdragon 768G

Summary
Overall Good chipset with a overclock version of SD 765G.
